We all know what bran muffins are good for… and if you do not, just look at the color, and you will figure it out. The thing you need to watch in bran muffins is the sugar content. This recipe uses the sweetness from dates, so you get the sweetness you would from sugar AND the fiber and nutrients from the dates. If this doesn’t make you go, I don’t know what will!

Bran Muffins

  • ½ cup blanched almond flour
  • ½ cup flaxseed meal
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 6 dates
  • 3 eggs
  • 2 tablespoons Olive Oil
  • ¼ cup water
  • ¼ cup sesame seeds
  • ¼ cup sunflower seeds
  • ½ cup raisins
  1. Preheat the oven to 350° F
  2. In a large bowl combine almond flour, flax meal, baking soda and salt
  3. In a Vitamix or blender, blend dates, eggs, olive oil and water on high speed until very smooth
  4. Mix wet ingredients into dry, then stir in sesame seeds, sunflower seeds and raisins
  5. Spoon batter into lined muffin pan
  6. Bake at 350° for 20-25 minutes
  7. Cool and serve
