Chicken lettuce wrap recipe is a great way to sneak in vegetables for your kids. This recipe calls for brussels sprouts, bell pepper, mushroom, onion, and celery; but you can use whatever vegetables you have on hand. These wraps are also fun because you get to assemble it yourself. Bib lettuce or Romaine lettuce work. Just use what you have on hand!

Chicken Lettuce Wrap

  • 1 lb chicken tenders
  • 1 onion (diced)
  • 1 garlic clove (diced)
  • 1 orange bell pepper
  • 6 white mushrooms
  • 3 celery stalks
  • 3 carrots (sliced)
  • 5 Brussels sprouts
  • 2 tsp. rice vinegar
  • 1 Tbsp. coconut aminos
  • 1 tsp. red pepper flakes
  • 2 Tbsp. coconut oil
  • 1 head bib lettuce
  • Sea salt and pepper to taste
  1. Heat coconut oil in a large skillet over medium heat. Add onion, celery, pepper, and garlic. Saute for 2-3 minutes, or until the onion is translucent.
  2. Add chicken and saute for 4-5 minutes, until beginning to brown. Stir frequently.
  3. Add mushrooms, carrots, and Brussels sprouts. Saute for 3-4 minutes, stirring frequently.
  4. Add rice vinegar, coconut aminos, ground ginger, and crushed red pepper flakes. Stir to coat. Season with salt and pepper.
  5. Saute another 2-3 minutes or until chicken is cooked. Transfer to a serving platter with the iceberg lettuce. Spoon about 2 tbsp of chicken mixture into bib lettuce, wrap and eat.
