Fruit and Nut Bars

You have probably heard of Nature Valley’s Fruit and Nut Bars. These are better. Make these tasty no bake bars in advance for on the go breakfasts or snacks during the week! These bars have no additional sugar added, just the delicious taste of dried fruit, coconut, and cinnamon. All you need is a food processor and a few minutes of your time!

Ingredients

  • 1 cup black mission figs
  • 1 cup unsweetened shredded coconut
  • 1 cup dried cranberries (ingredients should just be dried cranberries, no sugar added)
  • 1 cup raw unsalted cashews
  • ½ tsp. sea salt
  • 2 Tbsp. Honey
  • 2 Tbsp. coconut oil
  • ½ tsp. cinnamon

Method

  • In a food processor, combine all the ingredients except for the honey and the cashews. Mix until well blended.
  • With the food processor running, pour honey into the feed tube. Fold in cashews.
  • Line an 8x8 pan with wax paper. Spoon mixture onto the wax paper and spread evenly with a spatula. Place another piece of wax paper on top and press mixture firmly into the pan as evenly as possible.
  • Refrigerate for 2 hours and cut in to bars.
