This kale sweet potato soup is an easy and delicious way to get lots of good nutrients into your body without even realizing it! Kale Sweet Potato Soup

  • 2 medium sweet potatoes
  • 4 cups vegetable broth
  • 1/2 cup sweet onion
  • 2 cups chopped kale
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried ginger
  • 1 Tbsp extra virgin olive oil
  • Salt and pepper to taste
  1. Preheat your oven to 375 degrees. Microwave sweet potatoes for 10 minutes, then bake in the oven for 20 minutes or until soft. Remove skin from the sweet potatoes.
  2. Put potatoes, vegetable broth, sweet onion, paprika, salt, pepper, and olive oil in a high speed blender or food processor. Puree until smooth.
  3. Transfer the puree to a soup pot. Heat the mixture. Add kale and allow the hot soup to wilt the kale leaves. Simmer until ready to serve.
