Nutty Green Rice

Rice, almonds, olive oil, and vegetables make this green rice recipe the perfect well balanced meal, giving you all the macro and micronutrients you need!

Nutty green rice is both delicious AND filling. Just a little helping goes a long way. Pair this detox approved dish with a detox approved vegetable (such as broccoli, kale, carrots, cauliflower, or cabbage salad) and you will have a well balanced meal with carbs from the rice, protein from the almonds, fat from the olive oil, and micronutrients from the vegetables. Enjoy!

  • 1 cup brown basmati rice
  • 2 cups water
  • ½ cup almonds
  • ½ small bunch of parsley
  • 1 clove garlic
  • 1 ½ Tbsp. lemon juice
  • 1 ½ Tbsp. olive oil
  • ½ cucumber, diced
  • Salt and pepper to taste


  • Bring water to a boil, add rice, stir, and simmer covered for 45 minutes. Do not stir again!
  • While the rice is cooking, blend almonds, parsley garlic, oil, and lemon juice in a food processor.
  • Remove rice from heat and let sit for another 10 minutes.
  • Remove cover and allow rice to cool. When rice is cool, stir with nut mixture, add cucumber. Sprinkle with salt and pepper to taste.
