Ingredients

  • 1 cup brown basmati rice
  • 2 cups water
  • ½ cup almonds
  • ½ small bunch of parsley
  • 1 clove garlic
  • 1 ½ Tbsp. lemon juice
  • 1 ½ Tbsp. olive oil
  • ½ cucumber, diced
  • Salt and pepper to taste

Method

  • Bring water to a boil, add rice, stir, and simmer covered for 45 minutes. Do not stir again!
  • While the rice is cooking, blend almonds, parsley garlic, oil, and lemon juice in a food processor.
  • Remove rice from heat and let sit for another 10 minutes.
  • Remove cover and allow rice to cool. When rice is cool, stir with nut mixture, add cucumber. Sprinkle with salt and pepper to taste.
