Stuffed Zucchini

  • 4 medium zucchini
  • 2 lb ground turkey
  • 4 roma tomatoes (diced)
  • 1 Tbsp. olive oil
  • 1 yellow onion (diced)
  • 4 cloves garlic (minced)
  • 1 tsp. paprika
  • 1 tsp. ground cumin
  • 1 tsp salt

  1. Preheat the oven to 375 degrees. Slice the zucchini in half lengthwise. Use a spoon to scoop out the soft middle and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add onion and garlic and saute for 4-5 minutes. Add ground turkey to the pan and use a spatula to break into smaller pieces. Stir in paprika, cumin, salt, and pepper. Cook until the turkey is done, stirring occasionally. Add diced tomatoes to the pan and cook for 3 more minutes.
  3. Carefully spoon the beef mixture into the zucchini. Bake for 20-25 minutes, until zucchini is tender.
